Pulmuone opened a smart kimchi plant, which was built with a 30 billion KRW investment, on May 2019 and started its premium kimchi production to enter the global kimchi market. The Global Kimchi Plant, a 30,329-square-meter facility with total 3 floors, produces its annual capacity of 10,000 tons (30 tons per day) of kimchi variations including vegan Napa cabbage kimchi, vegan Napa cabbage white Kimchi, vegan cubed radish Kimchi, etc. to accommodate the growing demand for premium kimchi in the overseas market including the U.S., China, and Japan.
Pulmuone’s Global Kimchi Plant is equipped with IP cameras and IoT sensors that can monitor the manufacturing site in real time to ensure safe food supply and the best quality and prevented the possibility of changes in the fermentation and taste of kimchi through a sensor that checks the temperature and humidity and salinity gradient in all 40-step processes. This is critical in a kimchi factory where, temperature control is important. To maintain the best hygiene management for the factory, a suitable drainage channel is designed to prevent water from being left on the factory floor, thus preventing the propagation of germs. For thorough inspections, a metal detector and X-ray equipment are applied to prevent foreign substances or metal from entering products. In addition, the aging level can be adjusted in consideration of the delivery time of each export country such as the U.S., China, and Japan through the real-time inventory management system with wireless identification (RFID) technology.
Pulmuone has taken the first steps toward the globalization of kimchi by completing the construction of a global kimchi factory. Pulmuone will enact its utmost efforts to promote our kimchi’s superiority and spread the proud Korean kimchi culture.
